Egg casserole

This turned out FANTASTIC:

half a sliced zucchini
some chopped up asparagus
a yellow pepper cut into bite sized pieces
Some green beans chopped up
Optional :  Sliced mushrooms or any other veggie you may have around.  Make sure everything is cooked

Place veggies in a standard glass pie pan

Chop up some ham - I used about a quarter pound of ham but you can use sausage or bacon or omit entirely if you don't do meats.

Mix the meat in with the veggies and about a half cup of grated cheddar.  Cut an additional few slices or chunks of cheddar and mix in as well.

In a mixing bowl blend up some eggs and probably a half cup of heavy cream.  I used a manual old style egg beater.  As some salt and pepper to taste.

Pour the egg mixture over the veggie/meats in the pie pan.

Bake on the top shelf of the over at 400 degrees for about 20 to 30 minutes.  The casserole is done when there is no juice or liquid on top of the crust.

This is great to make on a Sunday night and then to use as quick breakfast meals during the week.
