Yesterday my selfie stick came.  It seems like a cool device.  Maybe I will try it out tonight.

I had some cramps in my legs in the night.  Perhaps it's due to low carb?  I will be pounding water today.

I ordered a new shirt from Joe Banks last night.  $20 with shipping included.  I tried on some shirts and it seems like I'm right on the verge of fitting into an 18 which is awesome.

Pain in my bif toe on the right foot.  I sure hope it isn't gout.

Egg casserole

This turned out FANTASTIC:

half a sliced zucchini
some chopped up asparagus
a yellow pepper cut into bite sized pieces
Some green beans chopped up
Optional :  Sliced mushrooms or any other veggie you may have around.  Make sure everything is cooked

Place veggies in a standard glass pie pan

Chop up some ham - I used about a quarter pound of ham but you can use sausage or bacon or omit entirely if you don't do meats.

Mix the meat in with the veggies and about a half cup of grated cheddar.  Cut an additional few slices or chunks of cheddar and mix in as well.

In a mixing bowl blend up some eggs and probably a half cup of heavy cream.  I used a manual old style egg beater.  As some salt and pepper to taste.

Pour the egg mixture over the veggie/meats in the pie pan.

Bake on the top shelf of the over at 400 degrees for about 20 to 30 minutes.  The casserole is done when there is no juice or liquid on top of the crust.

This is great to make on a Sunday night and then to use as quick breakfast meals during the week.

I had to make a doc's appointment to renew my scripts.  It's set for Friday the 13th at 5:00 PM.  What a time......

Anywany.  It's time to get ready for the doc's and lose at least 50......maybe even 100 pounds.

How you ask?

Same old same old.  Tried and true low carb.  It officially kicked off Friday 10/30/2015.

I  am  going to try and use this as a food and exercise diary.  I think we'll start today!

This morning I walked 2.66 miles in around a 17:30 pace.  I also spent thirty or so minutes on yard work.

Breakfast:

2 slices of bacon chopped and fried.

Added:
2 medium sliced mushrooms
1 small red pepper chopped
a handful of spinach
cooked, drained fat, scrambled in 3 large eggs and a little bit of feta.

Also 2 cups of coffee with heavy cream and splenda

Lunch

1 4 oz 80/20 burger pan friend
1 large mushroom suated in pan
one low carb tortilla
a little bit of blue cheese dressing
A slice of onion
5 or 6 chopped gape tomatos
feta
mustard
lettuce - romaine

as of noon - about 3 bottles of water

Dinner -
Chicken casserole

3 chicken breasts cooked then cut up into bite sized peices.  I cooked 3 whole breats and sprinled with paprika, adobo and garlic power.  I cooked covered at 400 for 30 minutes then uncovered for the last 15 minutes.


in a pan 3 tablespoons of butter
add 2 celery stalks chopped
one slice of onion chopped
6 ounces of sliced mushrooms

Saute for a few minutes then add some chicken bullion powder and water.  Ler simmer for 10 or so minutes

Add 6 ounces of heavy cream and cook until slightly thickened
add 2 more ounces of mushrooms
thin a little with a couple ounces of water
add about 4 ounces of shredded cheddar

Cook until thickened again.

Add one teaspoon of curry power and salt and pepper to taste.

Let sit

Cook one package equivalent of fresh broccoli
a cup of sliced zucchini
 until almost tender
I did in microwave for about 4 to 5 minutes.

In baking pan place cooked veggies

Add the chicken.  This should pretty much cover the bottom of the pan.  Now mix in a cup of grated cheddar.

Top this with about half a package of spinach leaf.

Pour the sauce over the top.  Sprinkle the top with curry powder.

Cover the dish with foil

Cook at 400 for 30 minutes

Remove cover and cook another 10 or 15 minutes or until it's slightly brown.

Take out of oven and let sit for at least 5 minutes

Serve with salad, cole slaw, etc.
